My mom made this every Thanksgiving and it’s become a staple for me to bring to our family get together. The recipe resides in a thirty-year old cookbook from my childhood church, complete with stains and tears and all the things that make old cookbook recipes just taste better. Recipe credit goes to my “second mother” growing up, Sharon Lawrence. Just opening the cookbook every fall to make this recipe brings back memories like no other. Sweet Potato Casserole

Ingredients

  • 4-6 sweetpotatoes (enough to make 4 cups)
  • 1 cup sugar
  • 1/2 tsp½ salt
  • 1/2 cup butter, melted
  • 1/2 tsp vanilla
  • 1/2 cup milk
  • 2 eggs slightly beaten

Topping

  • 1 cup pecans, chopped fine
  • 1/3 cup butter, melted
  • 1 cup sugar
  • 1/3 cup All Purpose flour

Instructions

Filling

  • With mixer, mix all ingredients together well and pour into casserole dish.

Topping

  • Mix together well and sprinkle over the top of potatoes. Bake 30 minutes at 325 degrees.

When it comes to quick, nutritious (preferably delicious) mid-week meals for our family, I’m all in! This recipe uses something we have a lot of around here (BEEF) and a favorite vegetable that makes North Carolina proud – sweet potatoes! Did you know we are the leading state for producing this sweet gem? We are! Tex Mex Sweet Potato Beef Skilliet Meal

Tex Mex Beef & Sweetpotato Skillet Dish

Prep Time 5 minutes
Cook Time 30 minutes

Ingredients

  • 1 lb. lean ground beef
  • 2 tbsp olive oil or butter, divided
  • 2 garlic cloves minced
  • 1 small onion diced
  • 4 sweet mini peppers or 1 bell pepper diced
  • 2 medium sweetpotatoes diced (washed, skin on)
  • 1 can mexi-corn or Southwest corn
  • ½ cup beef broth
  • 1 can diced tomatoes
  • 8 oz. tomato sauce
  • 1 tbsp southwest seasoning
  • Salt & Pepper to taste

Instructions

  • Rinse and scrub potatoes to clean. Chop into ½ inch cubes. Dice peppers and onions.
  • Heat 1 tbsp oil or butter in skillet over medium heat.
  • Add garlic and sauté until fragrant, careful not to burn.
  • Add ground beef, breaking apart and stirring until cooked through – about 5-7 minutes. Remove garlic and hamburger to covered bowl or plate and set aside.
  • In same skillet, add 1 tbsp oil (or butter), sauté peppers, onion and sweet potatoes until slightly tender.
  • Pour in broth, diced tomatoes and tomato sauce, cover and simmer 12-15 minutes.
  • Stir in cooked beef and corn. Cook until liquid reduces and mixture thickens a bit. Add spices and salt/pepper to taste.
  • Serve alone or over rice. Pair with mixed green salad. Enjoy!

We’re getting ranchy y’all…with grilled sweet potatoes! You’re just going to have to trust me on this one and you’re just going to have to try them. I promise they’ll not only please you, they’ll please your family and any crowd. The perfect appetizer or pair for pretty much any kind of meat I can think of – even venison, because that’s what I did here last night. Grilled Sweet Potatoes This Farm Wife

Best Grilled Sweetpotatoes

Ingredients

  • 1 lb. Sweetpotatoes Washed (peeled, optional)
  • Olive Oil to coat
  • Kosher Salt
  • 2 Tbsp Ranch Seasoning or your choice steak seasoning, taco seasoning, or your favorite season all
  • Fresh Parsley or Cilantro to top optional

Instructions

  • Scrub and wash sweetpotatoes, cut into wedges
  • Par-boil potatoes 5 minutes, let cool 5 minutes
  • Toss with olive oil, salt and seasoning
  • Spray grill with cooking spray and grill potatoes on medium high heat 3-4 minutes, flip, cook 3-4 minutes on other side then remove
  • Garnish with parsley or cilantro and serve warm

Sweetpotato and Bacon Salad

Ingredients

  • 2-3 pounds sweetpotatoes 5-6 medium
  • 4-5 strips bacon
  • 2 boiled eggs chopped
  • 1 Green Onion chopped
  • 1/4 cup minced Parsley fresh is best, but you can sub 2 Tbsp dried
  • 1/4 cup chopped Dill fresh preferred, but you can sub 2 Tbsp dried
  • Dressing:
  • ½ cup mayo
  • 2 Tbsp Stone Ground Mustard
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Honey
  • Salt and Pepper to Taste

Instructions

  • Peel and cut up sweetpotatoes into 1 ½ in cubes, Cook 6 minutes until just fork tender
  • Cook and crumble bacon (I use oven method – 400 degrees, on foil lined baking sheet, cook until done about 10 minutes)
  • Drain potatoes and mix with dressing, bacon and herbs
  • Serve warm or cold (I prefer cold)

Cast Iron Steak & Smashed Potatoes

Ingredients

  • 4-6 Red Potatoes can use white potatoes
  • Olive Oil
  • Butter
  • Shredded Cheese cheddar or colby jack are great options
  • Bacon Bits
  • Toppings of Choice : Green Onions Chives, Sour Cream

Instructions

  • How to cook Smashed Potatoes
  • Wash and dry potatoes, place on a microwaveable plate and microwave for 10-12 minutes until fork tender
  • Drizzle small amount of olive oil in cast iron skillet, place potatoes on top
  • Smash each potato with a potato masher until flattened
  • Drizzle more olive oil over potatoes
  • Top with cheese and bacon bits
  • Broil until cheese is melted
  • Top with sour cream, chives or green onions
  • Devour!

I know…this one isn’t beef or butter or made in a skillet, but it sure goes good with beef bbq (or most any other meal!) Simple, homemade slaw (aka coleslaw, but I prefer the short version.) And since I was making it, I thought I’d share. (Except there’s none left to share- I ate all that was left right out of the bowl for dessert. You can judge me.) Watch below to see how I make it.

Quick & Easy Classic Coleslaw

Ingredients

  • ½ Head Cabbage
  • ⅓ Cup Mayonnaise
  • 3 TBS Sugar
  • Salt
  • Pepper
  • Celery Seeds optional
  • Carrots optional

Instructions

  • Chop ½ head of cabbage (or more…or less) – add chopped carrots if you wish Add 3 Tbsp Sugar (or more…or less) and mix with slaw, let sit 10 min. or more if you have time – it’s fine to make all at once if you don’t
  • Add mayonnaise to desire – start with smaller amount, mix and add more as needed
  • Dash (or ten) of salt, pepper and celery seeds
  • Mix well, taste and try not to eat all of it before you serve
