Few things say southern like Chicken Fried Steak and I think everyone needs to know how to make it! It used to intimidate me, but I’ve made it so much now it’s become second nature – almost as much as eating it is. It’s not hard to make and you’ll be the star of the show when you do ( even though one secret ingredient really makes it that. ) This crispy delicious use of a versatile piece of meat is a must cook, must eat! Best Chicken Fried Steak & Gravy

Ingredients

  • 1 lb. Beef Cubed Steak
  • 1 sleeve saltine crackers crushed
  • 1 cup all purpose flour plus 2-3 tbsp for gravy
  • 1 cup vegetable or canola oil
  • 2 tsp Musket Powder Seasoning optional
  • Season Salt for dusting meat and adding to gravy
  • 2 eggs
  • ¼ cup milk

Instructions

For Meat:

  • Cut cubed steak into 4″ pieces (I cut my large pieces in half), sprinkle both sides with season salt and Musket Powder
  • Combine flour, crushed saltines (and more seasoning if you wish) in a gallon plastic (or paper) bag
  • Beat eggs and milk in bowl
  • One by one, shake pieces of steak to coat in plastic bag, then dip individually in egg mixture, drain, and re-coat with flour mixture in bag
  • Fry steaks once all coated in med-high heated oil in skillet until golden brown, flip and fry other side the same
  • Once meat is done, place on a rack on a foil lined baking sheet in 200 degree oven to keep crispy until time to eat

For Gravy:

  • Reserve a few tablespoons of drippings from frying meat and add enough milk to fill skillet half-way. Dust a few tablespoons of flour over top and whisk until thickened over low heat. Add season salt (or table salt) to taste. Serve hot over meat and mashed potatoes.

Sometimes I get a hankering for something a little saucy. I’m talking about beef & broccoli saucy, y’all. (Stay with me, friends.) And most of the time I don’t want to use my “real steak” for anything but “real steak” so I try to find other ways to use my “other steak” (as in cubed steak). This recipe does all of that in a grand way! Cubed steak beef and broccoli – it’s a thing and I’m going to show you how I do this thing. Watch (and read) below. Then go get your sauce on, try it yourself and let me know what you think.

Easy Skillet Beef & Broccoli

Ingredients

  • 1 lb cubed steak but into 1″ strips (you could also use sirloin steak, flank steak, or beef tips)
  • 1 head of broccoli cut up into florets (bite-size pieces)
  • ½ small onion cut in thin strips
  • 1 Tbsp minced garlic
  • 3 Tbsp Corn Starch divided
  • 1/2 C. plus 2 Tbsp Soy Sauce
  • 3 Tbsp Brown Sugar
  • Steak Seasoning I prefer Musket Powder – musketpowder.com
  • Canola Oil or any vegetable oil

Instructions

  • Cut up meat into bite sized strips
  • Combine meat, 2 tbsp corn starch, 2 tbsp soy sauce, 1 tbsp musket powder in bowl, mix well
  • Heat 2 tablespoons canola oil in cast iron skillet over medium heat
  • Place meat in hot skillet and cook until done
  • In bowl combine: ½ cup soy sauce, brown sugar, minced garlic, 1 Tbsp corn starch
  • Remove cooked meat from skillet, add 1 Tbsp. more oil, along with broccoli florets and onion, cook 4-5 minutes
  • Add meat and sauce to skillet, bring to boil, then reduce heat to simmer another 4-5 minutes until sauce reduces
  • Serve with rice and enjoy!

The perfect cast iron meal…steak and smashed potatoes! This meal is a regular at our home and I hope if you’ve never tried a steak in a cast iron steak that you will! Cast Iron Steak & Smashed Potatoes

Ingredients

  • 4-6 Red Potatoes can use white potatoes
  • Olive Oil
  • Butter
  • Shredded Cheese cheddar or colby jack are great options
  • Bacon Bits
  • Toppings of Choice : Green Onions Chives, Sour Cream

Instructions

  • How to cook Smashed Potatoes
  • Wash and dry potatoes, place on a microwaveable plate and microwave for 10-12 minutes until fork tender
  • Drizzle small amount of olive oil in cast iron skillet, place potatoes on top
  • Smash each potato with a potato masher until flattened
  • Drizzle more olive oil over potatoes
  • Top with cheese and bacon bits
  • Broil until cheese is melted
  • Top with sour cream, chives or green onions
  • Devour!
