Nothing says comfort on a cold day like a warm bowl of beef and noodles. This is the perfect weeknight meal to make in a pinch with an instant pot or add to crockpot in the early afternoon and have ready for supper. I tend to run out of ideas for what to do with our homegrown beef for stew, and this is a great option. You could substitute beef tips, chuck roast or even ground beef and have an equally delicious meal. Try adding some sour cream at the end to make it even creamier.
