Who doesn’t love meatloaf? Well, maybe some people, but those people are wrong. Just sayin’. 😉 I’ve made meatloaf a million and one different ways over the years. I’ve changed ingredients, changed pans, changed methods, but I’ve come around to this way and it’s my favorite. It’s easy, quick, only uses one pan (yay!) and most importantly – IT’S GOOD Y’ALL! The family always cleans this up (which annoys our dogs, but that’s neither here nor there.) This is a classic meatloaf probably very similar to the one your mom or Granny made and that’s never a bad thing. Let me know what you think!
- 1 LB ground round
- ⅓ c quick cooking oats
- Small onion diced
- ¼ c ketchup
- Splash milk
- 1 egg
- ½ tsp salt
- ¼ tsp pepper
- ¼ c ketchup
- 1 tbsp brown sugar
- 1 tsp mustard or horseradish
Mix
Patty into large circle, place in skillet
Bake at 350 for 40 min
Top with ketchup mixture and cook another 10 min (or to 160°)

I love meatloaf! Like you I am always changing up the ingredients. Sometimes I cheat and instead of cutting up onions and peppers I use salsa instead ♀️
I like to put mash potatoes on top of the meatloaf after it’s cooked then i put cheese on top and put back in the oven for a minute to melt the cheese. Corn goes excellent with meatloaf.
