Best Sweetpotato Pie

Ingredients

  • 2 c. 4-5 medium sweetpotatoes
  • 3 c. sugar
  • 3 eggs
  • ¾ cup whole milk or canned evaporated milk (NOT sweetened condensed
  • 1 tsp. vanilla extract
  • Pinch of salt
  • Pumpkin Pie Spice
  • 1 stick butter
  • 2 unbaked deep dish pie crusts

Instructions

  • Pre-Heat oven to 350 degrees
  • Boil potatoes until fork tender, drain and peel
  • Mix all ingredients in stand mixer (or with hand-mixer)
  • Pour into pie crusts
  • Bake for 55-60 minutes until firm
  • Top with whipped cream
