Ingredients
- 2 c. 4-5 medium sweetpotatoes
- 3 c. sugar
- 3 eggs
- ¾ cup whole milk or canned evaporated milk (NOT sweetened condensed
- 1 tsp. vanilla extract
- Pinch of salt
- Pumpkin Pie Spice
- 1 stick butter
- 2 unbaked deep dish pie crusts
Instructions
- Pre-Heat oven to 350 degrees
- Boil potatoes until fork tender, drain and peel
- Mix all ingredients in stand mixer (or with hand-mixer)
- Pour into pie crusts
- Bake for 55-60 minutes until firm
- Top with whipped cream
